TEMPURA 
1 c. self-rising flour
1 c. cornstarch
1 egg
1 c. water
2 tbsp. oil

Mix dry ingredients; beat egg with fork and add water and oil. Mix with dry ingredients and mix well. Dip fish into mixture and deep fry in hot oil until browned.

Great also for zucchini, broccoli, and onion rings!
