WHITE CAKE 
3 c. sifted flour
1/2 tsp. salt
2 c. sugar
1 tsp. lemon flavoring
1 tsp. vanilla flavoring
3 tsp. baking powder
3/4 c. shortening
1/2 c. milk plus 1/2 c. water
6 egg whites

Sift flour, baking powder and salt three times or more. Cream shortening. Add sugar and cream until fluffy. Add dry ingredients alternately with liquid, lastly fold in stiffly beaten egg whites.

Bake at 350°F in three 9-inch layers. Wonderful for fresh coconut, using 7 minute icing.
