BATTER FRIED CHICKEN 
1 egg, slightly beaten
2/3 c. milk
1 tbsp. Wesson oil
1 c. sifted all-purpose flour
1 1/2 tsp. baking powder
2 tsp. seasoned salt
1/4 tsp. pepper
1 (2 1/2 - 3 lb.) frying chicken, cut up
Wesson oil for frying

Combine egg, milk and Wesson oil. Sift together flour, baking powder, salt and pepper. Add to milk mixture, beat until smooth. Dip pieces of chicken in batter. Drain 5 to 10 minutes on rack. Fill Dutch oven 1/3 full with Wesson oil. Heat to 375 degrees. Cook chicken about 12 minutes. Drain on paper towels. 4 servings.
