RAINBOW PASTA DINNER 
1 (8 oz.) pkg. rainbow spirals or curly noodles
1/2 sm. red pepper, cut up
4 carrots, peeled & shredded
1 c. frozen peas
2 scallions, chopped
1 celery rib, chopped
1 c. diced chicken or ham
3/4 c. Italian dressing
Salt & Pepper
6 c. shredded lettuce

Cook pasta until tender, 8 to 10 minutes. Drain and rinse in cold water. Transfer to large bowl.

Add all remaining ingredients except rice. Stir, chill served on a bed of lettuce. Serves 6.
