CARAMEL CORN 
8 qts. popcorn
1 c. butter
2 c. firmly packed brown sugar
1/2 c. light or dark corn syrup
1/2 tsp. baking soda
1 tsp. vanilla
2 c. cocktail peanuts
1 tsp. salt

Use 2 large shallow baking or roasting pans. Melt butter, stir in sugar, corn syrup and salt. Bring to a boil, stirring constantly. Then boil without stirring for 5 minutes. Remove from heat; stir in soda and vanilla.

Gradually pour over popcorn and peanuts, mixing well. Turn into the two large pans and bake at 250 degrees for 1 hour (stirring every 15 minutes). Remove from oven; cool thoroughly. Break apart and store in a covered container.
