SHRIMP CREOLE | |
2 tbsp. butter 1 can or 1 lb. fresh shrimp 1 c. drained cooked rice 1/2 c. heavy cream 1/4 c. canned tomato soup 1/4 tsp. celery salt 1/4 tsp. salt 1/2 tsp.onion salt 1 lb. fresh peas 1/3 lb. mushrooms Melt butter, add shrimp and simmer for 3 minutes. Add rice, tomato sauce and seasoning, peas, and mushrooms. Heat to boiling point. Place in greased casserole, let stand a while as flavor improves. Place buttered crumbs on top. Bake for 30 minutes in moderate (350 degree) oven. Serves 4. |
