SWEET POTATO BISCUIT 
6 tbsp. shortening
4 c. mashed sweet potatoes
2 c. flour
3 tsp. baking powder
4 tbsp. sugar
1 1/2 tsp. salt

Preheat oven to 425 degrees. Sift together all dry ingredients. Add sugar and shortening to sweet potatoes. Combine together. Knead for 1 minute. Roll and shape into biscuits. Bake at 425 degrees for 12-15 minutes.
