CLARIFYING YOUR BROTH 
This is a great technique for making it nice and clear. Great for delicate soups like matzo ball.

your favorite homemade broth

After you have made your broth, strain and cool. Add 2 beaten egg whites to cold broth. Stir and bring to a simmer. Strain again (cheese cloth is great for this).

Note: All the floaties in the broth attach to the egg whites and after its strained you will have a wonderful clear broth!
