TABBOULEH 
1 c. cracked wheat (1 lb. fine)
1 c. cool water
1 c. fresh parsley, chopped
1/2 c. chopped green onion
1 med. onion, chopped
2 tomatoes, chopped
1 cucumber, chopped
Salt to taste
1/2 tsp. pepper
2 tbsp. soy sauce
Juice of 1 1/2 lemons
2/3 c. olive or corn oil
1/2 tsp. garlic powder
1/4 tsp. each of allspice, cumin, and paprika

Cover wheat with water and let soak 30 minutes. Combine vegetables in bowl. Combine spices, oil, and lemon juice. Pour over vegetables. Drain excess water off wheat and add to vegetables. Mix well. Let set 1-2 hours so flavors can combine. Good with pita bread.
