FLUFFY PANCAKE (OR USE FOR
WAFFLES)
 
2 c. flour
2 tbsp. sugar
4 tbsp. baking powder
1 tsp. salt
2 egg yolks, slightly beaten
2 c. milk
2 tbsp. butter, melted
2 egg whites, beaten stiff

Measure dry ingredients and stir to blend. Combine yolks, milk and butter. Add to dry ingredients. Beat until smooth. Fold in beaten egg whites. Use 1/3 cup batter for each pancake. Grease griddle slightly for first pancakes only. Bake until puffy and bubbly. Turn over before bubbles break and bake on other side.

I like this recipe Yet, I cheat and use a package mix, just add water, then let it sit for 20 minutes. I preheat the oven to 350°F and use two 9-inch cake pans with 1 patty of unsalted butter melted in each, the mix of 2 c. and water to make pourable, but not thin, in each pan about one cup. Bake for 12 minutes.. Enjoy! This will feed 4 people cut in halves or cut in wedges and serve, your choice of toppings.
