FLUFFY PANCAKE (OR USE FOR WAFFLES) | |
2 c. flour 2 tbsp. sugar 4 tbsp. baking powder 1 tsp. salt 2 egg yolks, slightly beaten 2 c. milk 2 tbsp. butter, melted 2 egg whites, beaten stiff Measure dry ingredients and stir to blend. Combine yolks, milk and butter. Add to dry ingredients. Beat until smooth. Fold in beaten egg whites. Use 1/3 cup batter for each pancake. Grease griddle slightly for first pancakes only. Bake until puffy and bubbly. Turn over before bubbles break and bake on other side. |
