SPANISH RICE 
1 lb. ground beef
1/2 c. onion, chopped
1/4 c. green pepper, chopped
1 lb. can peeled tomatoes
1/2 c. ketchup
1 1/3 c. water
1 tsp. brown sugar
1 tsp. salt
1/4 tsp. pepper
Dash of soy sauce
Chili pepper to taste
1 1/3 c. Minute rice

Brown ground beef, onion and green pepper. Drain excess grease. Add all remaining ingredients except Minute rice, stir and bring to a boil. Reduce heat, cover and simmer for 25 minutes, stirring occasionally. Stir in Minute Rice and turn off heat. Cover and let stand for five minutes or until liquid is absorbed and rice is tender. Yields six generous servings.
