CHOW MEIN 
1/2 lb. diced pork
3/4 lb. diced veal
1/2 lb. diced beef
6 tbsp. soy sauce
1 c. water
1 bunch celery, cut in 1/2 inch pieces
1 sm. onion, chopped
2 tbsp. cornstarch
1/4 c. water
1 (10 1/2 oz.) can water chestnuts
1 (2 lb.) can bean sprouts
1 (20 oz.) can mushrooms
Salt and pepper

Brown meat in hot fat. Add soy sauce and cup of water; simmer 2 minutes. Add celery and onion; simmer 1 1/2 hours. Blend cornstarch and 1/4 cup cold water; stir into meat mixture. Add chestnuts, bean sprouts, and mushrooms; heat through. Season. Serve over cooked rice, chow mein noodles or French fried noodles. For chicken chow mein; omit beef and add 2 cups diced cooked chicken, don't brown as with other meats.
