MARASCHINO CHERRY CAKE 
2 1/2 c. all purpose flour
1 c. sugar
1 tbsp. baking powder
1/2 tsp. salt
3/4 c. milk
1/4 c. cherry juice
1 tsp. vanilla
1/2 tsp. almond
4 tbsp. butter (1/2 stick)
1/4 c. vegetable shortening
4 lg. egg whites
18 cherries, drained and quartered (keep juice)
1/2 c. (2 oz.) chopped walnuts

Preheat oven to 350 degrees. In large bowl, stir together flour, sugar, baking powder and salt. In a small bowl, stir together the milk and cherry juice; add to flour mixture along with vanilla, almond extract, butter and shortening. Beat with mixer until smooth. Add egg whites and beat for 3 minutes at medium speed. With a spoon, stir in cherries and nuts. Put in pan or pans and bake for 30 minutes or until done. Cool completely before frosting. Frost with Cream Cheese Frosting.
