RICOTTA CHEESE COOKIES 
2 c. sugar
1 c. butter
3 eggs
1 lb. Ricotta cheese
4 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla

Cream sugar and butter. Add eggs, cheese and vanilla. Blend until smooth. Add all dry ingredients. Drop onto greased cookie sheet at 350 degrees for 10-15 minutes.

These cookies do not get real brown, only a light brown on bottom. You may have to adjust your oven temperature. When done I put frosting on mine. I use a butter cream frosting.
