GARDEN MEDLEY POTATOES 
1 1/2 lbs. sm. potatoes
1/3 c. chopped cucumber
1 1/2 tbsp. chopped green onion
2 tbsp. chopped green pepper
2 tbsp. sliced radishes
1 tsp. salt
Dash pepper
1/2 c. dairy sour cream
Parsley

Wash and peel potatoes; cook until tender in boiling salted water. Drain. While potatoes are cooking, combine cucumber, green pepper, radishes, salt, pepper and sour cream. Heat, but do not boil. Pour sour cream mixture over hot potatoes; serve immediately. Garnish with parsley. Serves 4.
