PUMPKIN CAKE | |
1 pkg. yellow two layer cake mix 2 eggs 1/4 c. water 2 tsp. baking soda 1 (16 oz.) can pumpkin 2 tsp. pumpkin pie spice Grease and flour 12 cup cast aluminum bundt pan or oblong pan, 13 x 9 x 2 inches. Blend all ingredients in larger mixer bowl. Beat 4 minutes on medium speed. Pour batter into pan. Bake at 350 degrees for 40-45 minutes. Cool 10 minutes. Remove from pan. Serve with hard sauce. HARD SAUCE: In small mixer bowl, blend 1/2 cup soft butter, 1 egg white and 1/2 package creamy white frosting mix (about 1 1/2 cup). Beat on high speed 1 minute or by hand until light and fluffy. Blend in 1/2 teaspoon vanilla. Chill until hard. |
