DATE AND NUT BALLS | |
1/2 lb. finely chopped dates 1 c. finely chopped cashew nuts (peanuts, walnuts, pecans, or other nuts may be used instead) 1/2 lb. finely chopped dried apricots 1 c. wheat germ 1/4 tsp. salt 1/2 c. honey 1/2 c. shredded coconut Thoroughly mix all ingredients except the coconut and mash them together. When the mixture is gummy, form 1-inch balls and roll them in shredded coconut. Store in the refrigerator until ready to serve. Makes about 50 balls. |
