CRAWFISH JAMBALAYA 
2 c. cooked rice
2 c. crawfish tails and fat
1 can tomato paste
1/2 c. oil
1/2 tsp. salt
Green onion tops
3 lg. onions
1 bell pepper
3 buds garlic
3 c. hot water
1 tsp. Tabasco sauce (more or less)

In the hot oil, brown onions until very dark brown (sprinkle with salt). Add tomato paste and continue stirring until brick brown color, about 10 minutes. Add bell pepper, garlic, crawfish and let cook about 10 minutes over very low fire, stirring constantly. Allow all ingredients to cook real well, then add cooked rice last.
