"FRENCH" COCONUT PIE 
1/2 c. (4 oz.) melted butter
1 1/2 c. sugar
3 eggs, beaten
2 1/2 c. frozen flaked coconut, thawed
1 tbsp. white distilled vinegar
1 tsp. vanilla extract
1 (9 inch) deep dish pie crust, unbaked
Non-dairy whipped topping

Preheat oven to 350°F.

In a large bowl, combine all ingredients except deep dish pie crust and non-dairy whipped topping, mixing well.

Pour mixture into the unbaked pie crust and bake for 50 - 60 minutes (cover pie after 30 minutes). Remove from oven and cool completely. Serve with non-dairy whipped topping.
