RHUBARB BREAD 
Mix 1 1/2 cups brown sugar and 2/3 cup oil. Add 1 egg, 1 teaspoon vanilla, and 1 cup sour or buttermilk. Mix and add 2 1/2 cups flour, 1/2 teaspoon salt, 1 teaspoon baking soda, 1 1/4 cup diced rhubarb, and 1/2 cups nuts; mix well. Pour into 2 well greased loaf pans.

Topping: 1/2 cup sugar, 1/2 teaspoon cinnamon, and 1 tablespoon melted butter. Sprinkle on top of bread. Bake at 325 degrees for 40 to 50 minutes. Let stand 2 to 3 minutes before removing from pan. Cool on rack.
