SWEET POTATO & ORANGE CASSEROLE 
2 lbs. sweet potatoes, peeled & cubed
Water
2 tbsp. butter
1/4 c. light corn syrup
1 tsp. grated orange peel
1/2 tsp. ground cinnamon
1/2 tsp. salt
1 tsp. honey
1/4 c. orange juice

Boil potatoes 15 to 20 minutes or until tender. Preheat oven to 375 degrees. In a large bowl, mix potatoes, butter until smooth. Beat in corn syrup, orange juice, orange peel, cinnamon, salt and honey until well blended. Spoon into 1 1/2 quart casserole. Bake 15 to 20 minutes or until heated through. Serve from casserole or pipe onto plates from pastry bag. Serves 8.
