PIQUANT FISH 
1 1/2 lbs. sole fillets
2 tbsp. lime juice
1/4 c. chopped red pepper
1/4 c. chopped green pepper
1 med. onion, cut into rings
1/2 tsp. freshly ground black pepper
4 lime wedges, to garnish

Place fish in microwave-safe baking dish with thickest portion to the outside. Sprinkle lime juice over fish. Top with red and green peppers, then onion rings. Sprinkle with black pepper. Cover with plastic wrap and vent. Microwave on HIGH (100%) for 5-6 minutes, or until fish flakes easily with fork. Let stand for 3 minutes. Garnish with lime wedges if desired. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
