FRIED CATFISH | |
6 sm. catfish, cleaned and dressed 1 tsp. salt 1/4 tsp. pepper 1 bottle hot sauce, sm. 2 c. self-rising cornmeal Salad oil Sprinkle catfish with salt and pepper. Marinate in hot sauce for 1 to 2 hours in refrigerator. Place cornmeal in paper bag. Drop one catfish in at a time and shake until coated completely. Fry in deep hot oil over high eat until fish float to the top and are golden brown. Drain well. Serve hot. |
