APPLE CAKE 
2 c. sugar
1 1/2 c. vegetable oil
2 tsp. vanilla
2 eggs, beaten
Juice of 1/2 lemon
1 tsp. salt
3 c. flour
1 1/2 tsp. baking soda
3 c. peeled apples, chopped
1 1/2 c. pecans, chopped

Preheat oven to 375 degrees. Mix together sugar, oil, vanilla, eggs, lemon juice and salt. Mix flour and salt. Add to liquid mixture. Add apples and pecans. Batter will be very stiff. Pour into buttered bundt or angel food cake pan. Bake at 375 degrees for one hour. Serve with lemon glaze.

GLAZE:

1 c. sugar
1/4 c. lemon juice

Bring to boil. Remove and pour over cake when cake is cold.
