ITALIAN CHEESE CAKE 
Preheat oven to 350 degrees.

Prepare a 9 inch spring side cheese cake pan with a graham cracker crust according to package directions. 2 c. sugar 5 eggs 4 tbsp. cornstarch (sifted) 1 tsp. vanilla 1 pt. sour cream (16 oz.)

Blend together all ingredients with an electric mixer on medium speed. Pour slowly into the spring side cheese cake pan prepared with graham cracker crust. Bake 1 1/2 hours or until lightly golden and firm. Shut off oven and cool cake inside with door open to avoid cracking cake. After cooling 30 to 45 minutes spread topping evenly over cake. Loosen cake from rim of pan and remove spring sides. Serve at room temperature or chilled; plain or with your favorite fruit topping.

TOPPING:

1 c. sour cream
1 tbsp. sugar
1 tsp. vanilla

Combine and mix well.

Crust variations: Add 3 tablespoons unsweetened cocoa to basic crust recipe and/or 1/4 cup chopped pecans.
