SWEET POTATO CASSEROLE 
1 lg. can sweet potatoes
4 tbsp. butter
1/2 c. nuts (chopped)
1/2 c. coconut
3/4 c. brown sugar
4 bananas (mashed)
1 tbsp. vanilla
1 c. crushed corn flake

Heat potatoes, drain, mash and beat. Add butter, coconut, nuts, sugar and mix together. If dry, add a little cream or orange juice. Place half of potato mixture in a buttered casserole dish. Cover with mashed bananas, then add remainder of potato mixture.

Sprinkle top with 1 cup crushed corn flakes (mixed with 2 tablespoons melted butter and 1/4 cup brown sugar). Bake 20-30 minutes at 350 degrees.
