GARDEN LOAF 
3 c. all-purpose flour
1 1/2 c. sugar
1 c. walnuts, chopped
4 1/2 tsp. baking powder
4 eggs
1 c. shredded zucchini
1 c. shredded carrots
2/3 c. salad oil
2 tsp. grated lemon peel

Preheat oven to 350 degrees. Grease 2 (8 1/2 x 4 1/2 inch) loaf pans. In large bowl with fork, mix flour, sugar, walnuts, baking powder, and salt. In medium bowl with fork, beat eggs slightly. Stir in zucchini, carrots, oil, and lemon peel. Stir into flour mixture just until flour is moistened. Batter will be very thick. Spread evenly into pans. Bake 1 hour or until toothpick inserted comes out clean. Cool on wire racks 10 minutes. Remove from pans. Serve warm. Makes 2 loaves.
