CARROT CASSEROLE 
3 c. herb flavored stuffing mix
3 tbsp. butter
3 c. cooked carrots, sliced
1 onion
1 can cream of celery soup
4 c. shredded Cheddar cheese
1/3 c. melted butter
salt and pepper to taste

Prepare stuffing as directed on package. Set aside.

Cook onion in 3 tablespoons butter. Add soup and cheese; stir until cheese is melted. Season with salt and pepper. Add carrots. Turn mixture into 2-quart dish. Cover casserole evenly with stuffing mixture. Pour 1/3 cup melted butter over top.

Bake in 350°F oven 20 minutes.
