SWEDISH MEATBALL 
2 lb. ground turkey, may substitute ground beef/pork
1/2 c. bread crumbs, or mashed potatoes
2 eggs, or egg beaters or 3-4 egg whites
1/2 tsp. salt or salt substitute
1/4 tsp. white pepper
Dash of nutmeg or allspice; optional
4 tbsp. grated onion
1/2 to 1 c. milk, if using ground beef/pork

Blend ingredients lightly in bowl; you may use your hands if you like but don't work the mixture too hard. Form meatballs on a damp cutting board or wax paper. Heat frying pan before adding meatballs. Fry a couple of meatballs to test. Fill the pan 2/3 full - do not overcrowd.

Shake pan now and then so that the balls are round and even. When brown, transfer to another glass dish. Continue to fry remaining meatballs. Place remaining browned meatballs in the glass dish and cook in the microwave for 2-3 minutes on high.

Stir once to twice to make sure that all meatballs get even heat. If you do not have a microwave oven, transfer the browned meatballs to a pan large enough to hold the complete recipe when done and simmer on low heat for 10-15 minutes. May be used as appetizers also. Freezes well.

Since microwave ovens vary in power, you may need to adjust your cooking time.
