OYSTER CASSEROLE 
1 to 2 pts. oysters, drained & save juice
1 1/4 tsp. salt
1 1/4 tsp. black pepper
1/2 c. chopped bell pepper
1/2 c. chopped celery
4 tbsp. butter
3 tbsp. Worcestershire sauce
Sm. onion, grated
4 tbsp. flour
1/2 c. light cream (half & half)
2 stalk packs Ritz crackers, crushed

Place one pack of crushed Ritz crackers on bottom of lightly oiled baking dish. Place oyster juice, butter, onion, bell pepper and celery in skillet. Saute 1 minute. Add oysters, salt, pepper and Worcestershire sauce and cook over low heat until oyster edges curl. Stir occasionally.

Remove oysters, onion, bell pepper and celery and place in baking dish. Place cream and flour into remaining juice in skillet; stir until thickened. Pour over oysters. Place remaining Ritz on top and bake at 350 degrees for 30 minutes. This is a nice addition to a Thanksgiving table.
