MEXICAN CORN BREAD 
2 cups cornbread mix
2 eggs
3/4 cup milk
1/3 cup vegetable oil
1 can cream style corn
4 mild jalapenos, chopped very fine
1 med onion, finely chopped
1 tbsp garlic, grated
1/2 lb. cheddar cheese, shredded

Mix all ingredients together. Pour into oiled iron skillet.

Bake at 350°F for 40 - 45 minutes until golden brown.
