1 c. sugar
1/3 c. butter
1 tsp. coconut extract
1 egg
1 pkg. (5 1/2 oz.) Bix Mix (Martha White)
1 pkg. (2 oz.) Spudflakes (Martha White)

Preheat oven to 375 degrees. Cream sugar, butter and coconut extract. Add egg; blend well. Stir in Bix Mix and Spudflakes; blend well. Shape dough into 3/4 inch balls. Place 2 inches apart on ungreased cookie sheet. Bake 12 to 14 minutes or until brown. Transfer to wire racks to cool. Makes 48 cookies.
