Mix undrained red beets with spices, sugar and vinegar. May add slices of onion and/or hard boiled eggs. Refrigerate for several hours.

Place beets in bowl. Combine remaining ingredients ... stand 24 hours before serving. Sliced onions broken into rings may be added, if desired.

Combine beet liquid with vinegar and next ... boil; pour over beets. Refrigerate overnight in covered ... before serving. Makes 4 to 6 servings.

Combine and keep in refrigerator. Good after 3 days.

Cook young beets until tender, dip in cold ... the rest of the ingredients and pour over beets; simmer for 15 minutes. Pack into jars and seal.



Put all of the above except beets in boiler and let come ... after it cools. I use a quart jar to keep mine in but any covered container will do.

To cook beets, wash (leaving 2 inches ... inch at top. Adjust caps. Process pints and quarts 30 minutes in boiling water bath. Yield: 6 pints.

Cook beets until tender. Cover beets with mixture and simmer for 15 minutes. This is good to pickle eggs, heart or tongue.

Dip beets in hot water for several minutes, slip off skins. Add remaining ingredients and simmer all together 15 minutes, put in jars and seal.

Reserve beet juice BEFORE skinning beet. Heat liquid to boil. Pour over beets in sterilized jars to fill to neck of jar. Cap with lid immediately.
