Slice and drain tofu on paper towels. Mash tofu. ... taste. Add enough mayonnaise to make creamy. Season with one or all of the above or others.

Whiz in blender until smooth and creamy. This is a basic dressing. May add herbs and seasonings as desired.

(High in protein, low in sugar, low cholesterol). (Non diabetics sweeten to taste with sugar).

Press water out of tofu and place in bowl. Break up tofu with a fork. Add other ingredients; chill overnight.

Rinse and drain Tofu. Place in large bowl and mash. Use food processor to chop celery and onion. Add rest of ingredients.



Serve as salad or as sandwich filling.

Toss potatoes with oil, vinegar, ... parsley and celery salt. Blend tofu in blender until smooth and creamy. Mix in potato mixture, chill and serve.
