RICOTTA COOKIES 
3 eggs
2 c. sugar
1 c. butter
2 tsp. vanilla extract
1 lb. Ricotta cheese
4 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt

Cream eggs, sugar, and butter together. Add vanilla and Ricotta. Beat well while adding flour, soda, and salt.

Drop by teaspoon onto ungreased cookie sheet. Bake 15 minutes at 350 degrees (light colored, not brown). Makes 6-7 dozen.

FROSTING:

1 (16 oz.) pkg. powdered sugar
1/4 c. butter

Beat sugar, butter, and vanilla together. Add milk and beat until smooth. Sprinkle Jimmies.
