RICOTTA CHEESE CAKE 
3 lb. ricotta cheese
9 eggs, lg.
1 1/4 c. sugar
1 1/2 c. cooked rice, cooled
3 tbsp. lemon juice
Grated rind of 1 lemon
Cinnamon

Beat 9 eggs thoroughly, medium speed with mixer. Add sugar, beat thoroughly. Add cheese, lemon juice and rind mix on low until completely blended. Add rice, blend again. Do not overbeat at this stage. Spray bottom and sides of springform 9 inch deep pan with Pam.

Sprinkle bottom of pan with cinnamon generously. Pour cheese mixture in pan and sprinkle top with cinnamon over entire cake. Bake at 350 degrees for 1 hour and 15 minutes. Cool before slicing.
