SMOKED FISH 
4 lb. fish fillets
2 lemons
1/2 lb. butter

Salt and pepper fillets to taste. Place on foil pan turned up 1/2 inch all round to keep juice and butter around fish. Slice lemon 1/8 inch thick and place 1 or 2 slices on each piece fish. Place 1 or 2 thin pats of butter on each piece. Place racks with pan and fish in smoker type cooker. Smoke 3 hours on medium heat.
