QUICHE 
Prepare pie shell and bake for 12 minutes. (Line unbaked pie shell with foil; fill foil with dried beans when baking in order to keep shell from forming bubbles in the bottom of the pan - dried beans may be reused.)

PREPARE BASIC QUICHE:

4 eggs
3/4 c. half & half (milk & cream)
1 1/4 c. milk

Beat eggs and add milk. Fill prebaked pie shell and bake at 375 degrees for 35-40 minutes or until silver knife is clean after being inserted into center of pie.

Add one of the following to each pie shell before filling and baking:

Spinach: 1 package frozen chopped spinach (squeeze out water). 2 tablespoons lemon juice and 1/2 pound diced Feta cheese. Sprinkle Parmesan cheese on top of pie.

Asparagus: 1 cup, cut into 1 inch pieces and sauteed in butter with sprinkle of dill weed.

Broccoli: 1 cup cut into pieces (stem and florets) steamed or sauteed in butter and 1/2 pound diced Swiss cheese. (Add sauteed onion slices if desired.)

Bacon: 1 cup cooked, drained well and crumbled with 1/2 pound diced Swiss cheese (may use diced ham instead of bacon).

Mushrooms: 1 cup, sliced and sauteed in butter with 1/2 pound diced Swiss cheese. Sprinkle top with Parmesan cheese.
