2 c. sugar 1 tbsp. flour 1 c. sweet milk Sm. piece of butter 6 egg yolks Mix sugar, flour and milk with the butter and beat until light and frothy. Add beaten egg yolks. Pour into an unbaked pastry-lined pan. Start with a hot oven at 450 degrees for 10 minutes to set the pastry, then reduce the temperature to 325 degrees for 30 minutes. (Makes 2 pies). For Meringue use 3 whites of eggs for each pie. Add 2 teaspoon of ice water and beat until frothy. Add 1/4 teaspoon of cream of tartar. Beat well, then add 1 tablespoon of sugar to each egg white. Beat until it won't fall out of bowl. Spread on pies and bake at 350 degrees until lightly browned. |
