CRAB BISQUE 
2 tbsp. butter
1 tbsp. finely chopped parsley
2 tbsp. flour
2 c. light cream
Salt to taste
1 tsp. finely chopped onions
1 1/2 c. chopped crab meat
2 c. chicken stock
Pinch of cayenne pepper

Melt butter; add onion, parsley and crab meat. Cook 5 minutes, stirring constantly. Add flour, blend well and cook 3 minutes. Stir in chicken broth and simmer 20 minutes. Add cream, cayenne pepper and salt.
