BROCCOLI MORNAY 
Cook whole stalks broccoli, drain and arrange on broil and serve platter. Cover with 2 cups Mornay sauce. Sprinkle with Parmesan/Romano cheese, 3 tablespoons grated. Broil quickly.

MORNAY SAUCE:

1 tbsp. each butter and flour
Dash paprika
1/4 tsp. salt
1 c. lite cream
1/4 c. milk
1/4 c. shredded Gruyere or Samsoe cheese
2 tbsp. shredded Parmesan
1/2 tsp. Dijon mustard
Dash white pepper
Drop Tabasco

Melt butter, stir in flour and spice. Cook until bubbly. Stir in cream/milk. Stir until slightly thickened. Stir in cheeses, mustard.
