SPINACH QUICHE 
1 (10 oz.) pkg. frozen, chopped spinach
1 sm. onion
2 tbsp. butter
2 eggs, beaten
2 tbsp. flour
1 c. milk (or heavy cream)
1/2 c. grated Swiss cheese
Salt & pepper
1/4 tsp. nutmeg

1. Cook spinach. Drain.

2. Saute onion in butter.

3. Mix in spinach. Saute some more.

4. Mix in beaten eggs.

5. Add flour, salt, nutmeg, pepper, milk and cheese; mix well.

6. Pour into pie shell.

7. Bake in 400 degree oven for 45 minutes.
