FAMOUS N.Y. STYLE CHEESECAKE 
1 lb. cottage cheese, sm. curd
1 lb. cream cheese
1 1/2 c. sugar
1 lb. sour cream
4 eggs, beaten
4 tbsp. butter, melted
3 tbsp. flour
3 tbsp. cornstarch
1 1/2 tsp. vanilla
1/2 tsp. salt
Fresh berries, if desired
2 plus tbsp. butter

Drain cottage cheese to remove as much moisture as possible; blend to smooth. Beat together with cream cheese and sugar. Add sour cream and blend again. Add eggs, butter, flour, corn starch, vanilla, and salt; blend, scrape bowl thoroughly, and blend again.

Pour into 9-inch spring form pan prepared as follows:

Generously grease bottom and sides of spring form pan with soft butter. Bake at 325 degrees 1 hour. Turn oven OFF, keep cake in oven an additional 1 hour. Refrigerate; top with fresh sliced berries.
