CINNAMON - NUT MUFFINS 
2 c. all-purpose flour
1 tbsp. baking powder
1/2 tsp. salt
1/2 c. sugar
1/2 c. pecans, chopped
2 eggs, beaten
1/2 c. milk
1/2 c. vegetable oil
3 tbsp. sugar
1 1/2 tsp. ground cinnamon

Combine flour, baking powder, salt, 1/2 cup sugar, and pecans; stir well. Make a well in center of mixture. Combine eggs, milk and oil. Add egg mixture to dry ingredients, and stir just until moistened. Spoon batter into paper-lined microwave muffin cups, filling half full. Combine 3 tablespoons sugar and cinnamon; sprinkle about 1/2 teaspoon sugar mixture on each muffin. Microwave at medium-high (70% power) for 2 1/2 minutes, rotating once. Let cool in pan 1 minute; serve immediately. Repeat with remaining batter and sugar mixture.

Since microwave ovens vary in power, you may need to adjust your cooking time.
