MANDARIN CHICKEN SALAD | |
2-3 c. cut up, cooked chicken 1 tbsp. minced onion 1 tsp. salt 2 tbsp. fresh, frozen or canned lemon juice 1 c. thinly sliced celery 1 c. seedless grapes 1/3 c. mayonnaise or salad dressing (Miracle Whip) 1 (11 oz.) can mandarin orange segments, drained or 1 c. tangerine sections 1/2 c. toasted, slivered almonds 6-8 lettuce leaves 6 pitted ripe olives In a bowl combine chicken, onion, salt, lemon juice and celery. Refrigerate several hours, or until well chilled. At serving time, toss chicken mixture lightly with grapes, mayonnaise and all but a few orange segments and almonds. Line salad bowl with lettuce leaves. Arrange chicken mixture on top. Garnish with reserved orange segments and almonds and ripe olives. Makes 6 servings. |
