CRAB MEAT SOUFFLE 
4 tbsp. butter
1/3 c. flour
1 1/3 c. milk
1 tsp. salt
Few grains pepper
4 eggs
1 1/2 c. cooked crab meat

Melt butter in a double boiler. Add flour and mix well. Add milk gradually and cook, stirring constantly, until thickened. Add salt and pepper. Add hot mixture slowly to the well beaten egg yolks, stirring constantly. Add flaked crab meat and cool slightly. Fold in the stiffly beaten egg whites and pour into a buttered baking dish. Bake in oven at 350 degrees for 50 minutes. Serves 6.
