SPRITS (DUTCH SHORTBREAD) 
350 grams butter
200 grams sugar
400 grams flour
1 pkg. vanilla sugar

Weigh all ingredients on a kilo-scale. Cream butter, sugar, and vanilla sugar together. Add flour and knead lightly. Divide dough into 4 and make 4 long rolls (approximately 1 inch diameter). Place on a cookie sheet and flatten with a fork. Bake at 325 degrees for 20 minutes. Cut into strips as soon as they come out of the oven and then let it cool on the cookie sheet. Makes about 4 dozen.

This is a very versitile dough. You can roll it out on a lightly floured board and use cookie cutters. I've added chocolate chips, made 1 inch balls, flatten them with a fork. It makes wonderful tart shells - fill with cherries and cream, pudding.
