ESCALLOPED HAM AND POTATOES | |
5 c. thinly sliced pared potatoes 3 c. cooked ham or 2 slices smoked ham 1 c. cooked peas 1 c. thinly sliced onion 3 c. thin white sauce Arrange potatoes, ham, onion and peas in alternate layers in a buttered casserole. Pour white sauce over all. Cover and bake in preheated 400 degree oven for 1 hour. Remove cover and bake another 30 minutes. THIN WHITE SAUCE: 1 tbsp. butter 1 tbsp. flour 1/2 tsp. salt 1 c. milk Melt butter in saucepan. Add flour, salt and blend well over low heat. Add milk gradually, stirring constantly to prevent lumps. Continue stirring and cooking over low heat until thickened and smooth. |
