FAR EAST FRUIT PLATE 
1 (20 oz.) can pineapple chunks
1 (11 oz.) can mandarin oranges, drained
2 lg. bananas, sliced
1/2 c. chopped dates
2 tbsp. cider vinegar
1/4 c. salad oil
1 tsp. curry powder
1/4 tsp. salt
Crisp salad greens
2 lbs. cottage cheese
1/2 c. chopped salted peanuts

Drain pineapple, reserving 1/2 cup syrup. Combine pineapple and next 3 ingredients in a large bowl. Combine reserved syrup with next 4 ingredients in a jar. Cover and shake well. Pour over fruit and marinate 1/2 hour. Arrange greens on 6 serving plates. Spoon cheese onto greens and top with fruit mixture. Sprinkle with peanuts. Serves 6.
