PUMPKIN APPLE STREUSEL MUFFINS 
2 1/2 c. all purpose flour
2 c. sugar
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
2 eggs, lightly beaten
1 c. pumpkin
1/2 c. vegetable oil
2 c. peeled finely chopped apples
Streusel topping

Combine first 5 ingredients and set aside. In medium bowl, combine eggs, pumpkin and oil. Combine with flour mixture, stir just to moisten. Add apples. Spoon into greased or paper lined muffin cups, 3/4 cup full. Sprinkle streusel topping. Bake at 350 degrees for 35 to 40 minutes or until toothpick comes out clean.

STREUSEL TOPPING:

2 tbsp. all purpose flour
1/4 c. sugar
1/2 tsp. cinnamon

Cut in 4 teaspoons butter until mixture is crumbly. Variation: 6 giant muffins. Cook 40 to 45 minutes.
